WHere is an easy interpretation of a drink from our latest cocktail list. It's a party-sized prepared mix which is packed with the essence of a festive period, which makes it excellent for hosting a festive gathering. Reserve the remaining cordial you can use for breakfast cocktails, desserts, or to mix another batch of this cocktail.
The Bikini Cocktail
Serves 10 servings
Ingredients for the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (makes 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Place all the items inside a pot, heat until it reaches a light boil, agitating to dissolve. Then, remove from the burner and let it to cool down entirely. Transfer into an sealable bottle, seal and refrigerate it in the refrigerator, where it will keep for up to four weeks.
To make Premix: Pour the specified liquid ingredients in a big jug, allow it to infuse for 60 minutes, then pass it through , ideally through a fine cloth, making it perfectly clear.
For serving: Add 85ml from the batch mix into your stirring glass containing ice, and agitate carefully for about 60 seconds to cool it down. Filter to a cold coupe glass or equivalent, top with a few cranberries and finish by giving it a brief mist of the essential oil above the glass.
